Apricots are one of the top crops of the Hunza Valley in Pakistan. The locals cook with apricots and use them in many more ways than you can imagine. They dry them, cook them, even extract oil from them. While we were in Pakistan we tried a bunch of the Hunza valley specialties and one of our favorites was apricot soup. It’s sweet, but not too sweet and we ate it several times as an appetizer. The sweetness comes from the apricots and no sugar is added. There are bits of apricot in the soup, creating tasty textured pieces within the soup base. If you are in the Hunza Valley, then definitely give this one a try!
